Lasagna

I love Italian food, especially dishes with red sauce. Spaghetti and meatballs are so delicious, baked ziti is tasty, but lasagna has to be my very favorite. I don't really have a recipe it's a "wing it" meal I learned from my mom, the "wing it" Queen. 



I make red sauce in large batches so I pretty much always have it on hand in my freezer. I think you should make a giant batch too! ...Recipe soon, I just realized I've never shared it and I've never taken pictures so I'll do that next time I make a batch, promise!

I make lasagna in 2 8x8 pans because that is plenty of food for Christopher and I to have 1 pan for dinner and leftovers and the second pan to freeze for later. 

I put a little sauce on the bottom of the pan, then layer noodles, ricotta mixture*, sauce, mozzarella, noodles, ricotta, sauce, mozzarella, noodles, both cheeses and end with sauce on top. 

ricotta mixture = one container of ricotta cheese, two eggs, a little bit of oregano, and sometimes a few other happy Italian spices.  I also pipe ricotta mixture like frosting in a zip top bag with a corner cut off, it's easier than trying to spread it over wiggly noodles. 

Bake until bubbly and for the sake of your oven place a baking sheet under the pan because things are going to get saucy in there. 

I serve lasagna with garlic bread and salad, and I could eat it every day of my life.
