Chicken Nuggets
I love chicken nuggets! I could eat them almost every day. I am a pretty picky eater, for example: I don't eat berries unless they're cooked in a pie or cobbler, I don't eat seafood with the very specific exception of fried shrimp (dipped in ketchup), I don't eat raw tomatoes or onions, not even on a salad, I don't like ham sandwiches or guacamole, I don't really like pancakes, unless they have bananas and chocolate chips. It can sometimes be a pain to eat with me. Sorry friends!
Anyway, I refuse to buy frozen chicken nuggets, because they are full of fake crap and sometimes you have to wonder what part of the chicken they ground up and stuffed into a nugget shaped press, so I make my own. It is super easy and SO good!
Cut a chicken breast into nugget sized bites, toss the bites with a little olive oil, salt, and pepper.
In a quart size bag mix half Italian seasoned bread crumbs and half plain panko bread crumbs, plus any other spices you might want. Sometimes I add a little extra garlic powder and Parmesan cheese, but it's not needed.
Toss the nugget bites in the bread crumbs 4 or 5 at a time until covered, place on a baking sheet and bake at 350 for about 20-25 minutes depending on the size of your bites.
I always eat my nuggets with ketchup or BBQ sauce because I'm a five year old, and those are two of the best condiments on the planet.
That is how easy it is to make chicken nuggets! Plus, you can make them with any flavoring you want, and size you want, and use ingredients you know you trust. Give it a try sometime!
Chicken Nuggets
Makes 12 nuggets
Ingredients
1 chicken breast
2 tbs olive oil
a couple pinches of salt and pepper
1/2 C Italian seasoned bread crumbs
1/2 C Panko bread crumbs
other seasonings as desired
Directions
Heat oven to 350 degrees. Cut chicken breast into 12 pieces, toss with olive oil, salt, and pepper. Combine both bread crumbs in quart size bag, plus any additional seasonings you want to use. Add 4-5 nuggets at a time to the bread crumbs, close bag and shake vigorously until all nuggets have been coated. Bake on parchment lined cookie sheet for 20-25 minutes, or until done all the way through, time may vary based on nugget size.
