Almond Cookies

Happy cookie baking season! I’m going to be sharing some of my all time favorite cookies and a few new treats throughout the month of December. I hope you enjoy these tasty recipes. For the first of the cookies, let’s start with a new to me recipe, that is oh so dreamy, and totally easy, Almond Cookies! (Recipe by The Girl Who Ate Everything)

Almond is one of my very favorite flavors, and these cookies are full of the warm, fuzzy, feeling almond is known for.

This recipe is so easy. For the cookies you need butter, sugar, almond extract, flour, salt, baking powder. For the icing you need powdered sugar, almond extract, and water, and sliced or slivered almonds to top.

I decided to try these cookies after seeing them on Pinterest because I had all the ingredients already and didn’t even have to go to the store to make them.

First, mix your flour, salt, and baking powder together. Then, cream the butter, sugar, and almond extract. Guess what? You are literally half way done making the cookie dough.

After you have a smooth, buttery, sugary, blob, slowly add the flour to your dough just until combined.

Once your dough is finished, use a small scoop, or spoons, and your hands to make small cookie dough balls. If you like silicone baking mats, I highly recommend this one, it’s so pretty.

Then use your palm, or a cup, or a spoon to press the dough balls flat, and then pop those cuties into the oven.

While your cookies bake, stir your powdered sugar, almond extract, and water together to make your glaze.

Let your cookies cool just a little, then top with sliced or slivered almonds (I used slivered), then drizzle the glaze over the top of the cookies. Allow to cool the rest of the way before plating.

I own several fun cookie trays, because a pretty tray just makes yummy cookies even more festive, so I got this one out. It’s by Curly Girl Design, and I really love it. I also 100% support serving cookies on a paper plate, because sometimes you just don’t have time to find a cute tray, or clean a tray, and that’s alright.

I brought these cookies to work, and within an hour, two people asked for the recipe. I definitely recommend this cookie recipe for a holiday party, potluck, or just because. They really are so good.
