Cashew Chicken
I love meat and rice dishes. This cashew chicken recipe from Saving Room for Dessert is so good. Here are a few pictures of the steps. The chicken requires at least 30 minutes to marinate before cooking so make sure you have a little time. Other than the chicken soaking time, it’s a pretty quick meal to make and delicious.
The steps are pretty straight forward, marinate the chicken, then cook it and set aside. Saute the veggies to your doneness preference and then add the chicken and sauce, get it all thicc and happy, add the cashews, and boom. Also cook some rice or noodles or zoodles or whatever. Top with sesame seeds and green onion if you have it/want to, and you’ve got a pretty looking dinner. I’d imagine you could swap the chicken for some other meat or meat alternative if you wanted. I switch back and forth between using broccoli and green beans, and you could absolutely add other veggies if you wanted.
So, if this looks like something you’d enjoy, definitely give it a go. It’s a staple in our dinner rotation.
