Making beans and rice is a new adventure for me. I mean sure, I've opened a can of beans and tossed them on a plate with some rice before but I've never spiced beans before about a month ago.
Tonight I was on my own for dinner so I decided to make red beans and rice with chicken.
I heated some olive oil in a skillet and sauteed a hand full of onion and a large clove of garlic. Then I added the chicken (1 breast, cut into bite sized pieces) and let it get a little bit cooked on the outside. I added one can of red beans, rinsed. and about 1/2 - 3/4 of a can of water, and one packet of chicken bullion. Then comes the secret ingredient... kind of, 1 1/2 table spoons of Sofrito, I bought the frozen Goya brand, it's just tomatoes, onions, garlic, and peppers or something like that all pureed together to make one magical ingredient.
Let the beans and chicken simmer until the chicken is cooked and there is just a little liquid left in the pan. Then I added some brown rice that I made in a rice cooker and stirred it together. It was delicious.
