Whoopie Pie Cake for Family Birthdays


Part of our extended family celebrates birthdays every other month and each little family takes a turn hosting the cake and snacks celebration. We hosted the April party and celebrated my Mom, Uncle Mike, Aunt Cherie, and cousin Shannon. I decided that obviously a chocolate cake was going to be necessary, so I turned to my cake board on Pinterest to find one. I decided to try out this Whoopie Pie Cake, and holy cow I cannot wait to make it again.


First, you bake a cake recipe in two halves, I used my absolute favorite chocolate cake recipe from the Pioneer Woman, as usual.


While the cake cools whip up the marshmallow buttercream for the middle. Look how glorious that is. Please make sure to lick your beater so I don't feel like the only one still licking stuff from beaters well into my 30's.


Then somehow get one side of your cake out of it's pan. Good luck with this. The cake recipe I used it really nice and moist and fluffy, so I think that I needed to put parchment in the bottom because I sprayed the crap out of the bottom of that glass pan. Getting the cake cold (I popped it in the freezer for about 10-15 min) helped a little bit but as you can see, it broke. Boo!


Carefully set your cake chunks on a cooling rack while you ice the bottom half of the cake.


Spread your marshmallow buttercream on top of the bottom layer of cake, then add your top cake chunks. 


Thankfully you're going to slather this in chocolate ganache so no need to worry about that giant fault line.


Make your tasty chocolate ganache and dump it all over your cake.


I used a silicone spatula to spread the ganache around but I didn't spend too much time on this step. After letting it set for a while, I added four candles, one for each birthday we were celebrating.

This cake was pretty darn easy, and the recipe actually recommends just using a box cake mix for the cake part, so this is definitely a cake for all skill levels. Next time I am going to use parchment in the bottom of my pan for the top cake layer so I don't have to piece the top layer back together. this would also be amazing if you made cupcakes and cut them in half and made mini versions in a cup. Especially for a party where you don't want to worry about spending time cutting a cake. You could put it in short, clear cups and it would look so cute.
