Seattle, WA 2020 - Part 1
Christopher had a work trip to Washington State scheduled for the week of my Spring Break, so naturally I tagged along.
We were in Seattle at the beginning of March (7-15), Covid-19 was declared a pandemic while we were there, and after it was we did our best to practice social distancing for our last couple of days.
We had 2.5 days before and another 2.5 days after his work days to sight see and hang out in Seattle together. He was actually working north of Seattle, so for 3 days we were in Everett, WA. But for this post, I’m going to focus on the first two and half days we had in Seattle and alllllll the coffee we drank.
We arrived in Seattle on a Saturday a little before lunchtime. We took the light rail from the airport into the city and then got an Uber to take us and our junk to the hotel. We decided to just eat lunch at the hotel restaurant, make a quick visit the M Club Lounge, and then take a nap because it was raining like real rain and we were tired.
Day 2, Sunday! We went to Biscuit Bitch for breakfast and damn it was good. I love biscuits, and being from the south, I know a good biscuit when I taste one. And these were GOOD biscuits.
Christopher had the smokin’ hot bitch and I had a bitchwich with sausage, egg, and cheese, plus lattes for both of us.
After breakfast we walked around drinking coffee, people watching, and just enjoying each others company in a cool city.

We stopped for a quick snack break at Pike Place Chowder. We shared the sampler (New England clam chowder, seafood bisque, Manhattan clam chowder, chicken and corn chowder) and a side of mac and cheese. It was the perfect snack to warm us up and prep us for more coffee drinking.

Seattle has so much color. I really love this place. We were about to explode from all the coffee drinking, so we headed over to Elliot Bay Book Co. to browse and then got ourselves from ice cream from Molly Moon’s Homemade Ice Cream.
I had a scoop (or 2?) of union coffee with hot fudge and Christopher had Molly's favorite sundae (melted chocolate and salted caramel ice creams with hot fudge, candied hazelnuts, local, organic whipped cream and a Chukar Cherry).
Another thing I love about Seattle, places use so much compostable stuff and have compost bins. It’s really cool to see.
After our ice cream, we headed back to the hotel for a little while to hang out and relax before heading to dinner at 8oz Burger & Co.
8 oz Burger & Co. was so cozy and delicious, the staff was super friendly and had great recs, I loved everything about this place.
Christopher had the 8 oz wedge salad (iceberg, gorgonzola dressing, gorgonzola crumbles, candied bacon crumbles, balsamic onion) and a side of spiced, candied bacon. I had the 8 oz burger (their signature burger - arugula, balsamic onions, hills bacon, beechers flagship cheddar, truffle aioli) with truffle fries, and then we got an order or onion rings to share, becasue they looked so good! It was all delicious, and I hope we get to go back next time we are in Seattle!
Now for the literally ice cream (close enough to icing right?) on top of the cake…. this beauty. This is the PBJ Shake, vanilla ice cream, strawberry compote, peanut butter sauce, whipped cream. I was a little skeptical, but the server said it was really good, so I got it. And DAAAMMMNNNN. Knocked my socks off. I had no idea I needed to add PB&J to my ice cream, but now that I know, my life is forever changed. 10/10, highly recommend.
On our way back to the hotel after dinner, Christopher dropped his phone in the Uber. Not that it’s ever an ideal time to lose your phone, day 2 of 8 on the opposite side of the country on a work trip, is definitely not great. We contacted Uber and weren’t able to get the phone back, so Christopher filed a lost phone claim and we got him a cheap burner phone form Target so he could have maps and be able to get in touch with me or work while we were in Washington. It was funny and infuriating to watch all the places his lost phone went on google maps until it died. EYE ROLL!
On day 3 (Monday) we checked out of our Seattle hotel and headed north to Everett, after a couple last coffees, and a field trip to see snow.
We started the day with lattes from Storyville Coffee.
Obviously we made an obligatory stop at a Starbucks Reserve location. I had a latte with rainshine espresso, and Christopher had a Nicaraguan pour over. Same vibe as a regular Starbucks, different merch.
After a walk around the market, we got breakfast treats from Piroshky, Piroshky. I had the apple cinnamon roll and Christopher had the beef and cheese piroshky.
Then we went to pick up our rental car for the work portion of the trip, and headed to the Seattle Japanese Garden.
We were just a few weeks early for the garden to be in full spring bloom, but it was still lovely. We had such a nice relaxing time walking around the garden and enjoying the cool weather and beautiful scenery.
We stopped for lunch at Potbelly before adventuring out to find some snow. I LOVE Potbelly, and because we don’t have them near us at home, I try to get a quick sub and one of each cookie they have in stock when I’m near one. The cookies are so good, and it’s definitely my top requested souvenir when Christopher travels for work.
Our adventure to find snow brought us to Stevens Pass Ski Resort. We drove up the mountain, winding through tons of snow, but with nowhere to pull over and play. When we got to Stevens Pass, we pulled into their parking lot to make a couple snow balls.
We each made a couple of snow balls, I plucked a few mini icicles, and then we realized that Allbirds and Rothy’s are not really snow appropriate footwear so we got back in the car and headed to Everett.
