I love tacos, and nachos, and chips and salsa/queso. So when Publix had giant bags of Fritos scoops on sale buy one get one free I decided to make a taco dip. I did a little searching on Pinterest for inspiration but generally just kind of layered my favorite parts of tacos.
I used homemade crockpot refried beans, mild salsa, sour cream, 1 packet of Taco Bell taco seasoning, shredded Mexican blend cheese, sliced black olives, and Fritos Scoops, plus Jalapenos and Wholly Guacamole for Christopher.
I mixed the refried beans and salsa together until I had a good dipping consistency but the salsa didn't completely overpower the flavor of the beans. Then I mixed about 8oz of sour cream and the Taco Bell taco seasoning packet together. Then Layered the bean mixture, sour cream mixture, guacamole, cheese, olives and jalapenos. Then just grab a giant bag of scoops or tortilla chips, or pita, or anything else dipping size and dip away.
This would be great with a margarita.
