12 Days of Baking - Day 11: Melt in Your Mouth Cookies
The second cookie recipe Chris requested this year was Melt in Your Mouth Cookies. I had never had these cookies before celebrating Christmas with the Hofreiters, and this was my first time making them. They are very thin, a little chunky and kind of lacy looking, but so melty once you bite into them.
Super simple ingredients here: brown sugar, flour, butter, baking soda, vanilla, egg, finely chopped pecans.
Stir together your dry ingredients.

Cream together your butter and brown sugar.

Add egg and vanilla.

Scoop small spoonfuls onto cookie sheets and bake.
Take them out as they start to brown around the edges, the middles may still look a little gooey, that's alright. Let them cool on the cookie sheet for a minute or two and then transfer to a wire cooling rack.
Don't be fooled, they may look strange, but they are oh so yummy.
See how thin they are. Almost like a delicious cookie cracker.
