I wanted to save the prettiest cookies for last, but then they ended up looking more like open wounds than cookies. I promise they taste like pretty cookies and not anything like I would imagine a wound would taste like.

I found these Raspberry Almond Shortbread Cookies on Pinterest and couldn't resist the short ingredients list and delicate look.

Sugar, butter, flour, almond extract, seedless raspberry jam, powdered sugar for the glaze. That's it .

 Cream your butter and sugar and then mix in flour until just combined and a little crumbly.

Wrap up your dough and chill in the fridge for at least an hour.

Make 1" balls and then press your thumb or some other finger into the middle to make little craters.

Fill the craters with a little dollop of raspberry jam.

Sprinkle with sugar before baking.

After the cookies have cooled, or if you're like me, once you get sick of waiting, drizzle glaze over the tops of your cookies. I'm thinking that I may have had a prettier glaze design if I had let them cool a little more, but I wanted to try one.
