12 Days of Baking - Day 9: Iced Oatmeal Cookies
I love a good oatmeal cookie, and typically I make mine with chocolate chips, but I've had my eye on this Iced Oatmeal Cookies recipe for a while. 12 Days of Baking seemed like the right time to give this little delight a try.
Pretty simple ingredients here. You know I like simple.
First you're going to take your oats for a little spin in your food processor or blender.
Grind 'em up until they are still chunky but finer than straight out of the container.
Mix up your dry ingredients including the oats.
In case you're new here... cream your butter and sugars until they are really fluffy.
After adding in your dry ingredients and getting distracted so you forget to take a picture, get out your handy dandy scooper or a couple of spoons and plop some dough balls on a baking sheet.
Bake and cool your cookies, and yano forget to take pictures again... oops.
Then make the icing, it's so simple. Powdered sugar and milk.
Dip your cookies into the icing and give 'em a swirl, then let them set on a cooling rack.
YUM!!!
These cookies are so soft and light and chewy and tasty. Of course mine look NOTHING like that pictures in the recipe, but who cares. I'm way more concerned with how my treats taste than how they look. I'd rather eat an ugly, delicious cookie over a pretty, gross cookie any day.
