12 Days of Baking - Day 4: Chocolate Chocolate Chunk with Bacon
I love chocolate. I love cookies. I love bacon. I love Chocolate bacon cookies. I know I am not the first person to put bacon in a cookie, but the first year I made these I had never seen it before, so let's pretend I invented this treat. Thanks!
Another simple recipe, flip the bag of semi-sweet chocolate chunks over and follow the instructions. Except we're going to add bacon at the end. The bacon didn't make the ingredients photo because Christopher was busy cooking it for me.
Mix up your dry ingredients. I do this first on occasion. I can be wrangled into following the rules sometimes.
Then cream your butter and sugars. I feel like this photo and line are going to get old, but this is a very important part of the process. Get that butter and sugar nice and fluffy.
Add your eggs, this is after one and before the second was beat in.
Slowly add in the dry ingredients, now you can tell it's a chocolate cookie!
Dump in most of the bag of chocolate chunks. I kept a few in the bag for me to eat while I finished these. Plus one we add the bacon they are really chunky.
Stir in your chocolate chunks nice and gently.
Now crunch/cut/chop your cooked bacon. I used about a pound and a half this year. Usually I use one pound but last year I decided they weren't bacony enough, so I kicked it up a notch.
Stir that delicious bacon in.

Then scoop your cookies onto a baking sheet and get ready for a delicious sweet and salty flavor explosion.
I love the saltiness that the bacon brings to this loaded chocolate cookie. It's so much fun and so tasty. This is another crowd pleaser, people get all excited about a cookie with bacon in it. It's just different enough that everyone wants to try it. And it's totally easy.
