12 Days of Baking - Day 6: Coconut Macaroons
When I started my cookie list for this project, I asked Christopher if he had any special request, and one of those special requests was coconut macaroons with cherries on top. These are crazy simple, so I was more than happy to make this special request happen.
I don't even remember where I got the recipe from because it was so simple I memorized it. All you need is a can of sweetened condensed milk, two bags of sweetened shredded coconut, 1 1/2 tsp of almond extract and maraschino cherries cut in half.
Mix everything except the cherries in a bowl.
Scoop or spoon spoonfuls onto a cookie sheet, I used my handy dandy scooper.
Place your cherry halves on top of as many as you'd like. I left a few plain just in case.
Bake at 350 for 10-12 minutes or until dry on top and a little brown on the edges.
Transfer to cooling rack as soon as you can get them off the sheet, next time I'd use parchment paper, they stuck to the Silpats a bit.
Wait for them to cool and then eat. Or if you hate coconut like I do, feed them to your husband and bring the rest to work.
